Once you're comfortable finding your way around Photoshop, layers and masks are the next real skill jump. They're the difference between "editing a photo" and "editing a photo non-destructively" — meaning you can undo or adjust your work later without starting over. Whatever's on the top layer covers whatever's underneath it, unless that top layer has transparent areas.
